Demand factor is the mechanical work required to move the bar, expressed relative to what an average-proportioned lifter would do at the same load. A demand factor above 1.0 means your athlete is doing more work per rep than average. It's a concrete way to explain why two athletes lifting the same weight aren't always doing the same job.
